Ingredients
- 2 tablespoons ground paprika
- 1 tablespoon ground cayenne pepper
- 1 tablespoon onion powder
- 2 teaspoons salt
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 4 salmon fillets, skin and bones removed
- 1/2 cup unsalted butter, melted, divided
Directions
Step 1 –In a small mixing bowl, add the paprika, the cayenne, the onion powder, the salt, the white pepper, the black pepper, the thyme, the oregano, and the basil.
Step 2 –Brush the salmon fillets on both sides with 1/4 cup of the butter.
Step 3 –Sprinkle the fillets evenly with the spice mixture.
Step 4 –Drizzle 1/2 of the remaining butter on one side of each of the salmon fillets.
Step 5 –In a large, heavy skillet over high heat, cook the fillets, placing the salmon butter-side down, until blackened, about 2-5 minutes.
Step 6 –Turn the fillets and drizzle with the remaining butter.
Step 7 –Continue cooking until the salmon has blackened, the fish easily flakes apart with a fork, and reaches an internal temperature of 145 degrees F when tested with a thermometer.
Step 8 –Serve hot.
