Triple Yum Cobbler

“Yum, yum, yum!” That exclamation is a mandatory requirement after every bite of this Triple Yum Cobbler! It has three kinds of sweet, juicy berries, black, blue, and rasp(berry) for triple the fun. The brown-sugary cinnamon topping combined with a scoop of vanilla ice cream adds even more excitement and brings you the sweetest trio to be! Ingredients

  • For the berry filling:
  • 3 cups blackberries, rinsed
  • 3 cups blueberries, rinsed
  • 2 cups raspberries, rinsed
  • 3/4 cup sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • For the brown sugar topping:
  • 1 1/2 cups all-purpose flour
  • 1/3 cup plus 1 teaspoon sugar, divided
  • 1/3 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 stick butter, cut into small pieces
  • 1/3 cup water, boiling
  • vanilla ice cream, to taste, for serving

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Spray a 9×13-inch baking dish with nonstick cooking spray.

Step 3 –In a large bowl, add the blackberries, the blueberries, and the raspberries and toss to combine.

Step 4 –Sprinkle the berry mixture with 3/4 cup of the sugar, the lemon juice, and the cornstarch and stir to combine.

Step 5 –Allow the berry mixture to sit for 10 minutes before stirring again.

Step 6 –Pour the berry mixture into the prepared baking dish.

Step 7 –In a medium mixing bowl, add the flour, 1/3 cup of the sugar, the brown sugar, the baking powder, and the salt and whisk to combine.

Step 8 –Mix the butter into the flour mixture with a pastry blender or a fork until the butter mixture becomes crumbly.

Step 9 –Pour the boiling water into the butter mixture and stir until combined.

Step 10 –Spoon the butter mixture over the top of the berry mixture and gently spread, taking care to cover the berry mixture completely.

Step 11 –Sprinkle the remaining sugar evenly over the top of the cobbler.

Step 12 –Bake the cobbler, uncovered, until the topping is cooked thoroughly and has started to brown, about 55 minutes-1 hour.

Step 13 –Serve the cobbler warm with the vanilla ice cream.
