Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1/3 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 cup fresh peaches, peeled and chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line two baking sheets with parchment paper.

Step 3 –In a large bowl, add the butter, the sugar, and the brown sugar and use an electric hand mixer to beat until light and fluffy, about 5-7 minutes.

Step 4 –Add the egg, the vanilla extract, and the almond extract to the butter mixture and beat to combine.

Step 5 –In a medium bowl, add the flour, the cinnamon, the cream of tartar, the baking soda, the salt, and the nutmeg and whisk to combine.

Step 6 –Adjust the mixer to low speed and gradually add the flour mixture to the butter mixture, beating continuously to combine.

Step 7 –Add the peaches to the cookie dough and mix gently with a spatula to combine.

Step 8 –Drop the cookie dough by the tablespoonful, spaced 2 inches apart, onto the prepared baking sheets.

Step 9 –Bake the cookies until set, about 14-16 minutes.

Step 10 –Allow the cookies to cool on the sheets for 2 minutes.

Step 11 –Transfer the cookies to wire racks to cool completely.

Step 12 –Store the cookies in an airtight container until ready to serve.

Step 13 –Serve.
