Tuesday Skillet Slaw

Everything always seems to happen on Tuesday nights. Why does everyone always choose that night to plan something?! Don’t they know you just made it through Monday and you need time to rest?! Well, maybe someday they’ll learn, but until then, this Tuesday Skillet Slaw will be there to fill you up before you have to move onto the next thing. Get nice and full of some juicy turkey and crunchy coleslaw in a tangy sauce. Serve it over a bed of rice or on a salad and you’ve got yourself a delightful dish that will make you forget all about the things that are pulling you in a million different directions. And don’t worry, Tuesday Skillet Slaw can be eaten on any day that you need a satisfying supper solution. It’s sure to make the longest of days so much better!

Ingredients

  • 1 tablespoon chipotle hot sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 1/2 teaspoons ginger, minced
  • 1 teaspoon agave syrup
  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil
  • 1 pound ground turkey
  • 1/2 teaspoon salt
  • 1/2 tablespoon ground black pepper
  • 1 (8-ounce) package coleslaw mix
  • 1/2 red bell pepper, diced
  • 2 green onions, chopped, or more, to taste
  • 2 cloves garlic, minced
  • 1 tablespoon sesame seeds

Directions

Step 1 –In a small bowl, combine the chipotle hot sauce, the rice vinegar, the soy sauce, the ginger, and the agave syrup together to make the sauce.

Step 2 –Heat the olive oil and the sesame oil in a wok or large skillet over medium heat.

Step 3 –Add the ground turkey to the wok and cook, stirring to break up any clumps, until the juices run clear, about 6 minutes.

Step 4 –Season the turkey with the salt and the pepper.

Step 5 –Transfer the turkey to a large bowl and reserve the remaining turkey juices in the wok.

Step 6 –Combine the coleslaw mix, the red bell pepper, the green onions, and the garlic in the wok with the reserved turkey juices and cook over medium heat, stirring regularly, until the slaw is slightly wilted, about 1-2 minutes.

Step 7 –Add the sauce to the coleslaw mixture and mix to combine.

Step 8 –Return the turkey to the wok and cook, stirring regularly, until it is heated through, about 2-3 minutes.

Step 9 –Add the turkey to the coleslaw mixture and toss to combine.

Step 10 –Sprinkle the sesame seeds over the skillet slaw.

Step 11 –Serve.
