Ingredients

  • 1 butternut squash, peeled and seeded, cubed
  • 3 cups water
  • 3/4 teaspoon salt, divided
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 1/8 teaspoon ground nutmeg

Directions

Step 1 –In a saucepan over medium heat, add the squash, the water, and 1/2 teaspoon of the salt and bring to a boil.

Step 2 –Reduce the heat and simmer the squash mixture until it is tender, about 20 minutes.

Step 3 –Drain the liquid from the saucepan, then place the squash in a large bowl.

Step 4 –Add the butter, the brown sugar, the nutmeg, and the remaining salt to the squash and use an electric hand mixer to beat it until smooth.

Step 5 –Serve.
