White Bean Bake

Everyone loves a good bean dip, and this White Bean Bake just so happens to be a great one! It’s so comforting and hearty, with its balance of creamy and sweet-and-savory flavors, the vibrant richness of the tomato sauce, and the melty mozzarella on top… everyone is getting excited for it already! They won’t have to wait long, since it only takes 20 minutes to whip up a fresh batch! Prepare the tortilla chips, because this White Bean Bake is sure to become a go-to appetizer at your parties and cookouts in no time!

Ingredients

  • 1/4 cup extra virgin olive oil
  • 3 large cloves garlic, thinly sliced
  • 5 San Marzano tomatoes, peeled
  • 2 handfuls fresh spinach
  • 2 (15-ounce) cans cannellini white beans, rinsed
  • 1 tablespoon water
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • kosher salt, to taste
  • black pepper, to taste
  • 2 cups mozzarella, shredded
  • tortilla chips, to taste, for serving

Directions

Step 1 –Preheat the oven to 475 degrees F.

Step 2 –Heat the olive oil in a 10-inch ovenproof skillet over medium-high heat.

Step 3 –Add the garlic to the skillet and cook until lightly golden, about 1 minute.

Step 4 –Add the tomatoes to the garlic and mash them with a potato masher or the back of a wooden spoon.

Step 5 –Cook the tomato mixture for 1 minute.

Step 6 –Add the spinach, the cannellini beans, the water, the Italian seasoning, the crushed red pepper flakes, the salt, and the pepper to the tomato mixture and stir to combine.

Step 7 –Sprinkle the mozzarella cheese evenly over the top of the bean mixture.

Step 8 –Bake the bean mixture until the cheese has melted and starts to brown in spots, about 8-10 minutes.

Step 9 –Serve with the tortilla chips.
