You’ll never guess how much you love this breakfast casserole! The You’ll-Never-Guess Bake is filled with succulent ham and tangy rye bread cubes in a fluffy bed of eggs, a great breakfast already. But you’ll never guess what’s included in each bite; fragrant fennel, crisp and juicy apple, and melty cheese. In fact, You’ll-Never-Guess Bake has so many flavors going on, it’ll keep your taste buds guessing with each bite!
Ingredients
- 6 ounces day-old rye bread, cut into small cubes
- 1 cup fennel, chopped
- 6 ounces thinly sliced low-sodium ham, cooked and chopped
- 1 cup baking apple, chopped, of your choice
- 1 cup reduced-fat cheddar cheese, shredded
- 1/2 cup green onions, thinly sliced, plus more, optional, to taste, for garnish
- 1 1/2 cups refrigerated or frozen egg product, thawed, or 6 eggs, lightly beaten
- 2 cups fat-free milk
- 1/4 teaspoon black pepper
- salt, to taste
Directions
Step 1 –Preheat the oven to 325 degrees F.
Step 2 –Grease a 2-quart rectangular baking dish.
Step 3 –Spread 1/2 of the bread cubes in the prepared baking dish.
Step 4 –Sprinkle the fennel evenly over the bread cubes.
Step 5 –Top the fennel layer with the ham, the apples, the cheese, and 1/2 cup of the sliced green onions.
Step 6 –Top the bake with the remaining bread cubes.
Step 7 –In a medium bowl, add the eggs, the milk, the pepper, and the salt.
Step 8 –Drizzle the egg mixture evenly over the bread mixture in the dish and gently press it down so all of the bread cubes are moistened.
Step 9 –Bake, uncovered, until the edges are set and the center is still a little runny, about 50-60 minutes.
Step 10 –Transfer the bake from the oven and let it stand until the center is set, about 10 minutes.
Step 11 –Serve garnished with the extra green onions.
