Ingredients

For the cannoli filling:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar, plus more, for serving
  • 1/2 teaspoon ground cinnamon
  • nutmeg, to taste
  • kosher salt, to taste
  • 1/2 cup ricotta cheese
  • 2/3 cup mini chocolate chips

For the French toast:

  • 4 thick slices brioche
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter

Directions

Step 1 –In a large bowl using a handheld mixer, beat together the heavy cream, the powdered sugar, the cinnamon, the nutmeg, and the salt until stiff peaks form.

Step 2 –Fold in the ricotta cheese and the mini chocolate chips.

Step 3 –Transfer the filling mixture to a piping bag.

Step 4 –Cut a 2-inch wide slit into the bottom of each slice of the brioche to create a deep pocket.

Step 5 –Fill each pocket with the ricotta mixture.

Step 6 –In a shallow dish, whisk together the eggs, the milk, and the vanilla until combined.

Step 7 –Working one slice at a time, dip the bread in the egg mixture until fully soaked, about 45 seconds.

Step 8 –In a large nonstick skillet over medium-low heat, melt the butter.

Step 9 –Cook 2 slices of the bread in the melted butter at a time until golden, about 3-4 minutes per side.

Step 10 –Repeat until all of the slices are cooked.

Step 11 –Sprinkle with the extra powdered sugar and serve.
