Ingredients
For the French toast:
- 10 slices whole-wheat sandwich bread
- 4 large eggs
- 2 cups milk
- 1 teaspoon cinnamon
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon butter, melted
- 1 tablespoon honey
- 2 bananas, cut into 1/4-inch-wide slices
- 2 teaspoons turbinado raw sugar
For the drizzle:
- 1/2 cup maple syrup
- 1/3 cup peanut butter, plus more, to taste
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Line an 18×26-inch baking sheet with parchment paper and grease a 9-inch square baking dish.
Step 3 –Add the bread slices to the prepared baking sheet and bake, turning them halfway through, until they dry out, about 8 minutes.
Step 4 –In a large bowl, add the eggs and whisk to combine.
Step 5 –Add the milk, the cinnamon, the vanilla extract, and the salt to the egg mixture and whisk to combine.
Step 6 –In a small bowl, add the melted butter and the honey and whisk to combine.
Step 7 –Add the butter-honey mixture to the egg mixture and whisk to combine.
Step 8 –Cut 8 of the baked bread slices in half and cut the remaining slices into quarters.
Step 9 –Arrange the halved bread slices in the prepared baking dish standing up in rows and fill in any of the empty spots with the quartered bread pieces.
Step 10 –At random, place the banana slices, 1 by 1, in between the bread slices.
Step 11 –Slowly pour the egg mixture over the bread-banana mixture.
Step 12 –Press down on the bread slices to fully submerge them in the egg mixture.
Step 13 –Generously sprinkle with the raw sugar.
Step 14 –Bake the French toast until the top is golden and the custard is set in the center, about 1 hour-1 hour 10 minutes.
Step 15 –In a small pot over low heat, heat the maple syrup. Transfer from the heat.
Step 16 –Add 1/3 cup of the peanut butter to the warm maple syrup and whisk to combine.
Step 17 –Taste the syrup mixture and add more of the extra peanut butter, as needed. Whisk to combine.
Step 18 –Serve the French toast topped with the maple syrup-peanut butter drizzle.
