Ingredients

For the dip:

  • 1 1/2 cups white acre peas, fresh, cooked
  • 15-ounce can black beans, drained, rinsed
  • 1 1/2 cups tomatoes, fresh, finely chopped, drained
  • 1 1/2 cups corn kernels, fresh
  • 1/2 cup Vidalia onion, finely diced
  • 1 red bell pepper, medium, finely diced
  • 1 green bell pepper, medium, finely diced
  • 1 yellow or orange bell pepper, medium, finely diced
  • 2 jalapeños, finely diced (remove seeds and ribs for less spice)
  • 1/2 cup cilantro or parsley, finely diced
  • 1 avocado, seeded and chopped

For the dressing:

  • 4 tablespoons fresh lime juice
  • 1 tablespoon red wine vinegar
  • 2 garlic cloves, grated
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt, or to taste
  • 1/4 teaspoon ground black pepper, or to taste

Directions

Step 1 –Add the peas, black beans, tomatoes, corn, onion, bell peppers, jalapenos, and cilantro to a large colander to drain. When the mixture has finished draining, add all the ingredients to a large bowl and mix to combine.

Step 2 –Combine the lime juice, red wine vinegar, cloves, olive oil, salt, and pepper in a mason jar and shake well.

Step 3 –Add the dressing to the dip and mix well.

Step 4 –Just before serving, add the avocado, taste, and add additional salt and pepper if needed, and combine.

Step 5 –Store this dish tightly covered in the refrigerator for up to four days. Do not freeze.

Step 6 –Serve cold.
