Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1 1/8 cups sugar
  • 1/2 cup vegetable oil
  • 2 tablespoons buttermilk
  • 1 teaspoon vanilla
  • 3 bananas, extra ripe
  • 1/2 cup walnuts, chopped

Directions

Step 1 –Preheat the oven to 325 degrees F. Grease an 8×5-inch loaf pan with nonstick cooking spray.

Step 2 –Line the loaf pan with parchment paper for easier cleanup.

Step 3 –In a mixing bowl, whisk together the flour, the baking soda, the salt, and the cinnamon until thoroughly combined.

Step 4 –In a separate bowl, combine the egg, the sugar, and the oil.

Step 5 –Add the dry ingredients to the wet ingredients, and mix until just combined but be careful not to overmix.

Step 6 –Add in the buttermilk, vanilla, and mashed bananas, mixing until combined.

Step 7 –Pour the mixture into the loaf pan.

Step 8 –Top with the walnuts.

Step 9 –Bake until a knife inserted into the middle of the bread comes out clean, about 60-75 minutes.

Step 10 –Serve warm.
