Ingredients

  • 1 pound ground pork
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 3 cups potatoes, diced and cooked
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2-4 eggs

Directions

Step 1 –In a cast-iron skillet, cook the pork over medium heat until it’s no longer pink, about 5-7 minutes.

Step 2 –Add the onion and carrots, cooking until the onions are translucent and the carrots are tender, about 5 minutes.

Step 3 –Stir in the potatoes.

Step 4 –Season with the salt and pepper.

Step 5 –Reduce the heat to low.

Step 6 –Cook until the potatoes are crispy.

Step 7 –Top with eggs.

Step 8 –Cover the skillet until the eggs are cooked to your preferred doneness, about 2-5 minutes.

Step 9 –Serve immediately.
