Ingredients

For the patties:

  • 2 1/2 pounds ground beef
  • 2 cups saltine crackers, crushed into crumbs
  • 1 1/2 cups milk
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • cayenne pepper, to taste
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • flour, to taste

For the gravy:

  • 3 (10.75-ounce) cans condensed cream of mushroom soup
  • 1 3/4 cups milk
  • 1 3/4 cups water
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×3-inch baking dish with nonstick cooking spray.

Step 3 –In a bowl, combine the ground beef, the cracker crumbs, 1 1/2 cups of the milk, the Italian seasoning, the garlic powder, the cayenne, the salt, and the pepper and mix until well-blended.

Step 4 –Gently form the beef mixture into 6 or 8 equally sized patties.

Step 5 –Place the flour in a shallow bowl.

Step 6 –Lightly dredge each of the patties in the flour.

Step 7 –In a skillet with high sides over medium-high heat, cook the patties, in batches, until they are golden-brown on both sides. Internally, they will still be uncooked.

Step 8 –Place the browned patties in the prepared baking dish. If there are more than 6 patties, shingle them so they fit.

Step 9 –In a bowl, combine the cream of mushroom soup, the remaining milk, the water, and the parsley and mix well.

Step 10 –Evenly pour the gravy over the patties, then cover the baking dish with foil.

Step 11 –Bake the gravy-covered patties on the middle rack until the meat reaches an internal temperature of 160 degrees F, about 1 hour. If the patties are layered, turn the top layer over halfway through to ensure even cooking.

Step 12 –Serve.
