Asian Cobb Salad

We’re here to declare that Asian Cobb Salad is the delicious outlier to this claim! Ready in record time, this big bowl of leafy greens is loaded with fulfilling chicken, juicy mandarin oranges, tender carrots, smooth avocados, protein-filled hard-boiled eggs, and fresh green onions… phew, that’s quite the line-up with little time wasted. And that’s not all! This yummy dish gets drizzled with a sweet and tangy dressing that you whip up yourself. Wow, oh, wow. Asian Cobb Salad is here to impress!

Ingredients

For the salad:

  • 5 cups romaine lettuce, chopped
  • 1 (11-ounce) can mandarin oranges in light syrup, drained
  • 1/3 cup chicken, cooked, shredded
  • 1/3 cup carrots, grated
  • 1 avocado, halved, seeded, peeled, and diced
  • 2 hard-boiled eggs, diced
  • 1/4 cup green onions, sliced

For the dressing:

  • 1/4 cup plus 2 tablespoons rice wine vinegar
  • 1 clove garlic, pressed
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon ginger, freshly grated
  • 1 teaspoon soy sauce

Directions

Step 1 –In a large bowl, add the lettuce and top it with arranged rows of the mandarin oranges, the chicken, the carrots, the avocado, the eggs, and the green onions.

Step 2 –In a small bowl, whisk the rice wine vinegar, the garlic, the sesame oil, the sugar, the ginger, and the soy sauce together.

Step 3 –Serve the salad with the dressing.
