Ingredients
- 8 pork chops, boneless, medium-thick cut
- 1/2 cup hoisin sauce
- 1/3 cup brown sugar
- 6 cloves garlic, minced, or 2 tablespoons garlic, pre-minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons cornstarch
- 4 tablespoons water, cold

Directions
Step 1 –In a 6-quart slow cooker, evenly add the pork chops.
Step 2 –In a small bowl, add the hoisin sauce, the brown sugar, the garlic, and the ginger and stir until well-combined.
Step 3 –Evenly pour the sauce mixture over the pork chops, making sure all of the chops are evenly coated.
Step 4 –Cover the pork chops and cook on high until tender, about 4-5 hours.
Step 5 –Turn the slow cooker to the warm setting to keep the pork chops warm.
Step 6 –Transfer the sauce liquid from the slow cooker to a small saucepan over medium-high heat and bring it to a simmer.
Step 7 –In a clean small bowl, add the cornstarch and the cold water and whisk until no lumps appear to create a thickening slurry.
Step 8 –Add the slurry to the simmering sauce liquid and cook, while whisking, until the sauce thickens, about 2-3 minutes.
Step 9 –Serve the pork chops with the sauce.
