Ingredients

  • 1 (16-ounce) can of refried beans
  • 1 cup salsa
  • 1 cup long-grain rice, cooked
  • 2 cups cheddar cheese, shredded and divided
  • 12 (6-inch) flour tortillas
  • shredded lettuce, optional, for topping

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large bowl, combine the beans, salsa, rice, and 1 cup cheese.

Step 4 –Spoon about 1/3 cup of the mixture and place it off-center on top of each tortilla.

Step 5 –Fold the sides and ends over the filling and roll the tortilla up.

Step 6 –Arrange the burritos in the prepared baking dish.

Step 7 –Sprinkle the burritos with the remaining 1 cup cheese.

Step 8 –Cover and bake until heated through, about 20-25 minutes.

Step 9 –Top the burritos with lettuce.

Step 10 –Serve.
