Bayshore Salmon

Ingredients

For the salmon:

  • 4 salmon fillets, skinless
  • 2 tablespoons olive oil, divided
  • 2 tablespoons lemon juice
  • salt, to taste
  • black pepper, to taste
  • 4 ounces frozen spinach, thawed and dried
  • 4 ounces cream cheese, room temperature
  • 1/4 cup parmesan cheese, finely grated
  • 2 teaspoons garlic, minced
  • 1 tablespoon unsalted butter

For the optional garlic butter:

  • 1 tablespoon unsalted butter
  • 1 tablespoon garlic, minced
  • 1 tablespoon lemon juice

Directions

Step 1 –Season both sides of the salmon fillets with 1 tablespoon of the olive oil, 2 tablespoons of the lemon juice, the salt, and the black pepper.

Step 2 –Use a sharp knife to cut a pocket along the side of the salmon fillets about 3/4 of the way through, being careful not to cut all the way through.

Step 3 –In a large bowl, add the spinach, the cream cheese, the parmesan cheese, 2 teaspoons of the garlic, the salt, and the black pepper and mix well.

Step 4 –Fill the pockets of the salmon fillets with about 1-2 tablespoons of the spinach mixture and spread it evenly with the back of a spoon.

Step 5 –In a large skillet over medium-high heat, add 1 tablespoon of the butter and the remaining olive oil.

Step 6 –Add the filled salmon fillets and cook until they are golden and reach an internal temperature between 120-125 degrees F, about 6-7 minutes per side.

Step 7 –Transfer the salmon from the heat and keep warm.

Step 8 –In the same large skillet over medium-high heat, melt the remaining butter in the juices from the salmon.

Step 9 –Add the remaining garlic and the remaining lemon juice to the melted butter mixture and cook, stirring constantly, until it is fragrant, about 30 seconds.

Step 10 –Serve the salmon fillets with the garlic butter.
