Ingredients

For the salad:

  • 2 large romaine hearts, chopped
  • 1/2 pound salami
  • 8 ounces mozzarella balls, halved
  • 1 cup artichoke hearts, quartered
  • 1 cup cherry tomatoes, halved
  • 1 cup pepperoncini, chopped
  • 1/2 cup olives, sliced

For the vinaigrette:

  • 1/2 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon oregano
  • 1/4 teaspoon red pepper flakes
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Directions

Step 1 –In a large bowl toss the chopped romaine, the salami, the mozzarella, the artichokes, the tomatoes, the pepperoncini, and the olives together.

Step 2 –In a jar fitted with a lid, shake together the olive oil, the vinegar, the mustard, the oregano, and the red pepper flakes.

Step 3 –Season the dressing with the salt and the pepper.

Step 4 –Dress the salad with the vinaigrette and serve.
