Best Banana Bread Cobbler

This is the Best Banana Bread Cobbler, although it might also be the first and only time you’ve ever seen such a thing! It’s like banana pudding, bread pudding, and fruit cobbler all collaborated on a dessert that offers up the best of themselves! It features the creaminess and subtle, but tropical, flavor of a banana pudding, the tender texture and sweetness of a bread pudding, and the crunchy, nutty topping of a cobbler, all in one dish! With a scoop of ice cream on top, Best Banana Bread Cobbler is ready to take over the world of desserts and prove itself to be THE best!

Ingredients

For the cobbler:

  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup milk
  • 1/2 cup butter, melted
  • 4 medium-size ripe bananas, sliced

For the streusel topping:

  • 3/4 cup light brown sugar, firmly packed
  • 1/2 cup self-rising flour
  • 1/2 cup butter, softened
  • 1 cup old-fashioned oats
  • 1/2 cup pecans, chopped
  • vanilla ice cream, to taste, for serving

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Lightly grease a 7×11-inch baking dish.

Step 3 –In a bowl, add 1 cup of the flour, the sugar, and the milk and whisk just until blended.

Step 4 –Whisk in the melted butter.

Step 5 –Pour the batter into the prepared baking dish.

Step 6 –Top the batter with the banana slices.

Step 7 –In another bowl, add the brown sugar, the remaining flour, and the remaining 1/2 cup of the softened butter and stir with a fork until crumbly.

Step 8 –Add the oats and the chopped pecans to the brown sugar mixture and stir to combine.

Step 9 –Sprinkle the banana layer with the streusel topping.

Step 10 –Bake until golden-brown and bubbly, about 40-45 minutes.

Step 11 –Serve the cobbler with the ice cream.
