Ingredients

  • 2 tablespoons vegetable oil
  • 1 (3-3.5-pound) roasting chicken, cut up
  • 1 onion, peeled and chopped
  • 1/2 cup celery, chopped
  • 2 tablespoons cider vinegar
  • 2 tablespoons brown sugar
  • 1/4 cup lemon juice
  • 1 cup ketchup
  • 3 tablespoons Worcestershire sauce
  • 1/3 tablespoon yellow mustard
  • 1 cup water
  • salt, to taste
  • red pepper flakes, to taste

Directions

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –In a large skillet over medium-high heat, add the vegetable oil.

Step 3 –Add the chicken pieces to the heated skillet, in batches if necessary to avoid crowding the skillet, and cook until they are golden-brown on all sides.

Step 4 –Transfer the browned chicken to a paper-towel-lined plate to drain briefly, then transfer it to a large ovenproof baking dish.

Step 5 –Add the onion and the celery to the empty skillet and cook until they have softened, about 5-8 minutes.

Step 6 –Add the vinegar, the brown sugar, the lemon juice, the ketchup, the Worcestershire sauce, the mustard, the water, and the salt to the onion mixture, mix well, and taste to adjust the seasonings.

Step 7 –Add the red pepper flakes to the sauce mixture and simmer until the flavors are blended, about 30 minutes.

Step 8 –Pour the sauce over the chicken pieces.

Step 9 –Cover the baking dish with aluminum foil and bake until the juices run clear and the chicken pieces reach an internal temperature of 165 degrees F, about 1 hour.

Step 10 –Serve.
