Ingredients

For the crust:

  • 1 1/2 cups almond flour
  • 2-3 tablespoons maple syrup
  • 1 tablespoon water, optional

For the blueberry layer:

  • 2 ripe bananas
  • 1 1/2 cups blueberries, fresh or frozen, divided
  • 3/4 cup chocolate chips
  • 3/4 cup unsweetened coconut, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line an 8×5-inch baking dish or loaf pan with parchment paper.

Step 3 –Combine the almond flour and the maple syrup in a bowl and mix until a sticky, clumpy dough, that holds together when pressed, forms. Add the water if it seems too dry.

Step 4 –Press the crust into the prepared baking dish and bake for 15 minutes.

Step 5 –Allow the crust to cool for 15 minutes.

Step 6 –While the crust cools, blend the bananas and 1/2 cup of the blueberries until the mixture is the consistency of a purée.

Step 7 –Pour the fruit purée on top of the cooled crust.

Step 8 –Sprinkle the remaining blueberries, the chocolate chips, and the coconut on the fruit purée and gently press down on the toppings until the purée rises up and covers them.

Step 9 –Bake the bars for 40 minutes.

Step 10 –Allow the bars to cool, and then chill the bars in the refrigerator for at least 8 hours and up to overnight.

Step 11 –Slice and serve.
