Breakfast Brownies

Dessert for breakfast is always a fantastic idea. Especially when it’s going to leave you filled with energy and all the good things to make your day even better! Breakfast Brownies are basically the best of both worlds. You get the sweetness that you love about dessert time and the fulfillment that you need at breakfast! They’re really easy to whip up, too, and make enough for the whole week. Sounds like your mornings are going to be pretty sunny with some Breakfast Brownies in hand!

Ingredients

  • 1 1/2 cups quick-cooking oats
  • 3/4 cup brown sugar
  • 3/4 cup flax seed meal
  • 1/2 cup all-purpose baking flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 banana, mashed
  • 1/4 cup rice milk
  • 1 egg
  • 1 teaspoon vanilla extract

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Lightly grease an 8×10-inch baking dish.

Step 3 –In a large bowl, mix the oats, the brown sugar, the flax seeds, the flour, the baking powder, the cinnamon, and the salt together.

Step 4 –In another bowl, mix the banana, the rice milk, the egg, and the vanilla extract together.

Step 5 –Pour the banana mixture into the flour mixture and stir to combine.

Step 6 –Pour the batter into the prepared baking dish.

Step 7 –Bake until a toothpick inserted into the center comes out clean, about 20 minutes.

Step 8 –Cover the pan with a towel and allow the brownies to cool, about 5 minutes.

Step 9 –Slice and serve.
