Cheesy Amish Breakfast Casserole

Ingredients

  • 1 pound bacon slices, diced
  • 1 medium sweet onion, chopped
  • 9 large eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups cheddar cheese, shredded
  • 1 1/2 cups small curd cottage cheese
  • 1 1/4 cups Swiss cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –Heat a large skillet over medium-high heat.

Step 4 –Add the bacon and the onion to the skillet and cook, while stirring, until the bacon is evenly browned, about 10 minutes

Step 5 –Drain the bacon grease and transfer the bacon-onion mixture to a large bowl.

Step 6 –Stir the eggs, the hash brown potatoes, the cheddar cheese, the cottage cheese, and the Swiss cheese into the bacon-onion mixture.

Step 7 –Pour the casserole into the prepared baking dish.

Step 8 –Bake the casserole until the eggs are set and the cheese has melted, about 45-50 minutes.

Step 9 –Let the casserole stand for 10 minutes.

Step 10 –Serve.
