Cheesy Corn & Grits

Ingredients

  • 1 1/2 cups water
  • 1 teaspoon instant vegetable bouillon granules
  • 1/2 cup quick-cooking grits
  • 1/4 cup green onions or chives, finely chopped
  • 1/2 cup cheddar cheese, shredded and divided
  • 2 eggs, slightly beaten
  • 1/2 cup milk
  • 1 (8 ounce) can cream-style corn
  • 1/4 cup cheddar cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Lightly grease a 1-quart casserole dish.

Step 3 –In a medium saucepan, bring the water and vegetable granules to a boil.

Step 4 –Gradually stir in the grits.

Step 5 –Remove the saucepan from the heat.

Step 6 –Cover and let the grits stand for 5 minutes.

Step 7 –Stir in the onion and 1/2 of the cheddar cheese.

Step 8 –Stir in the eggs, milk, and corn.

Step 9 –Transfer the grits to the prepared casserole dish.

Step 10 –Bake, uncovered, until set in the center, about 45-50 minutes.

Step 11 –Sprinkle the top of the grits with the remaining cheese.

Step 12 –Let it stand 1-2 minutes before serving to melt the cheese.
