Chocolate Covered Bananas

Simplicity is sometimes welcomed, especially with these Chocolate Covered Bananas! Ripe, sweet bananas are cut and frozen, dipped into smooth, melted chocolate, and then rolled in flaky coconut, colorful sprinkles, the crunchy nuts, or perhaps crisp rice cereal. The mellow tropical sweetness of the banana, the rich chocolate shell, the wonderful topping! Not many sweets allow you so much versatility, but Chocolate Covered Bananas let you easily please everyone’s sweet desires. Easy, tasty, and fun are the best combination for a (almost healthy) simple dessert!

Ingredients

  • For the bananas:
  • 2 bananas
  • 4 ounces chocolate, chopped
  • 2 teaspoons coconut oil or butter
  • Optional, for topping:
  • coconut flakes, to taste
  • sprinkles, to taste
  • nuts, to taste, of your choice, chopped
  • crisp rice cereal or other cereal, crushed, to taste

Directions

Step 1 –Line an 18×26-inch baking sheet with parchment paper.

Step 2 –On a cutting board with a sharp knife, peel the bananas, then cut them in half horizontally.

Step 3 –Insert a skewer stick into the cut-side of each of the banana halves.

Step 4 –Transfer the banana halves to the prepared baking sheet.

Step 5 –Freeze the banana halves until firm, about 10-15 minutes.

Step 6 –In a shallow microwave-safe bowl, add the chocolate and the coconut oil.

Step 7 –In individual shallow dishes, add the coconut flakes, the sprinkles, the nuts, and the crisp rice cereal.

Step 8 –With the microwave power at 50%, microwave the chocolate-oil mixture, while stirring it in 30-second increments until smooth, about 1 minute.

Step 9 –Working quickly, dip the frozen banana halves into the melted chocolate, rolling them to coat, and then transfer the coated banana to your choice of toppings and quickly dip and roll to coat.

Step 10 –Transfer the coated bananas back to the baking sheet and freeze for at least 1 hour.

Step 11 –Serve.
