Ingredients

  • 1/2 cup panko breadcrumbs
  • 5 tablespoons olive oil, divided
  • 2 cloves garlic, crushed
  • 1 pound top sirloin steak, trimmed
  • salt, to taste
  • freshly ground black pepper, to taste

Directions

Step 1 –Place the breadcrumbs in a small bowl.

Step 2 –In a skillet over medium heat, combine 3 tablespoons of the olive oil and the garlic and heat until the garlic sizzles, about 20-30 seconds.

Step 3 –Strain the garlic oil into the breadcrumbs and mix to create the garlic crumbs.

Step 4 –Allow the garlic crumbs to cool.

Step 5 –Cut the steak into 2 (8-ounce) portions.

Step 6 –Place one of the steaks onto a piece of plastic wrap and fold the wrap to cover the meat.

Step 7 –Pound the steak with a tenderizer to 1/4-inch thickness.

Step 8 –Repeat the tenderizing process with the second steak.

Step 9 –Season the steaks on both sides with the salt and the pepper.

Step 10 –Spoon the cooled garlic crumbs over the steaks to cover the surface up to the edges.

Step 11 –Fold the plastic wrap over the steaks again and pound them to drive the garlic crumbs into the steaks.

Step 15 –Reduce the stovetop heat to medium and cook the steak until the meat reaches an internal temperature of 135-145 degrees F, about 2 minutes per side.

Step 16 –Repeat the pan-frying process with the remaining steak.

Step 17 –Serve.
