Ingredients

  • 1 cup extra long-grain rice or basmati rice
  • 2 cups water
  • 3 teaspoons vegetable oil, divided
  • 1 teaspoon salt
  • 1/2 lime, juiced
  • 3 tablespoons fresh cilantro, chopped

Directions

Step 1 –In a small heavy pot, combine the rice, the water, 1 teaspoon of the oil, and the salt.

Step 2 –Bring the water to a boil over high heat until most of the water evaporates.

Step 3 –When the water has been reduced to just skimming the top of the rice, reduce the heat to low and cover the pot until the water has been completely absorbed, about 20 minutes.

Step 4 –Turn off the heat and let the rice sit covered for 5 minutes.

Step 5 –In a medium serving bowl, combine the cooked rice with the remaining 2 teaspoons of the oil, the lime juice, and the cilantro, tossing until completely incorporated.

Step 6 –Serve hot!
