Ingredients
For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tablespoons butter, melted
For the pie filling:
- 28 ounces sweetened condensed milk
- 1/2 cup light sour cream
- 3/4 cup Key lime juice
- 4 Key limes or 2 limes, zested
For the topping:
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- lime zest, to taste
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –In a small bowl, mix together the graham cracker crumbs, the granulated sugar, and the butter.
Step 3 –Press the crust mixture into a pie pan and bake for 7 minutes.
Step 4 –Cool the pie pan for 30 minutes.
Step 5 –Preheat the oven to 350 degrees F.
Step 6 –In a medium bowl, whisk together the sweetened condensed milk, the sour cream, the lime juice, and the zest from 4 of the Key limes.
Step 7 –Pour the filling mixture into the crust and bake for 10 minutes.
Step 8 –Allow the pie to cool and chill for 3 hours in the refrigerator.
Step 9 –In a stand mixer, beat the heavy cream and the powdered sugar together until stiff peaks form.
Step 10 –Add the vanilla and beat again to combine.
Step 11 –Spread the whipped cream over the pie and top with the extra lime zest.
Step 12 –Serve!
