Ingredients

  • 2 cups medium pearl barley, cooked
  • 2 cups frozen corn, thawed
  • 1/2 cup sweet red pepper, chopped
  • 1/2 cup green pepper, chopped
  • 3 green onions, chopped
  • 1 tablespoon fresh cilantro, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons canola oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon pepper

Directions

Step 1 –In a large bowl, combine the barley, the corn, the red pepper, the green pepper, the green onions, and the cilantro.

Step 2 –In a jar with a tight-fitting lid, combine the lemon juice, the oil, the salt, the thyme, and the pepper and shake well.

Step 3 –Cover and refrigerate the dressing for at least 2 hours and up to overnight.

Step 4 –Drizzle the dressing over the salad and toss to coat.

Step 5 –Serve.
