Ingredients

  • 1 medium head cauliflower, chopped into large florets
  • 1/2 cup panko breadcrumbs
  • 1/2 cup cornmeal
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon kosher salt
  • 1 tablespoon refined coconut oil
  • 1 tablespoon peanut butter
  • 1 tablespoon maple syrup
  • 2 tablespoons soy sauce
  • 1/2 tablespoon hot sauce

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a baking sheet with parchment paper.

Step 3 –Place the cauliflower florets in a large bowl.

Step 4 –In a small bowl, mix the panko, the cornmeal, the cumin, the smoked paprika, the garlic powder, the turmeric, and the kosher salt together.

Step 5 –In a small saucepan over medium heat, whisk the coconut oil, the peanut butter, the maple syrup, the soy sauce, and the hot sauce together until it is fully-combined and slightly darkened, about 1-2 minutes.

Step 6 –Pour the sauce over the cauliflower and stir several times until well-coated.

Step 7 –Pour about 1/3 of the panko mixture over the cauliflower mixture and stir to combine. Repeat this step two more times, using all of the panko mixture and ensuring the cauliflower mixture is well-coated.

Step 8 –Use your hands to transfer the cauliflower mixture to the prepared baking sheet.

Step 9 –Discard the remaining panko mixture that is left in the bowl.

Step 10 –Bake the cauliflower mixture, flipping it halfway through, for 30 minutes.

Step 11 –Serve immediately.
