Dancing Sugarplum Cake

Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 cups self-rising flour
  • 3 teaspoons ground cinnamon
  • 1 (6-ounce) jar plum and apple puree
  • 1/2 cup walnuts, chopped
  • confectioners’ sugar, optional, for dusting

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease and flour a 10-inch fluted tube pan.

Step 3 –In a large bowl, combine the sugar and the oil.

Step 4 –Beat the eggs, one at a time, into the sugar mixture until well-blended.

Step 5 –In a bowl, combine the flour and the cinnamon.

Step 6 –Add the flour mixture to the egg mixture, stirring until just combined.

Step 7 –Beat the puree into the batter.

Step 8 –Stir the nuts into the batter.

Step 9 –Transfer the cake batter to the prepared pan.

Step 10 –Bake until a toothpick inserted in the center comes out clean, about 35-45 minutes.

Step 11 –Cool the cake in the pan for 10 minutes, then invert the cake onto a wire rack to cool completely.

Step 12 –Dust the cake with the confectioners’ sugar.

Step 13 –Slice and serve.
