Deep-Dish Breakfast Casserole

Deep-Dish Breakfast Casserole brings the satisfaction, the flavor, and all of your breakfast faves, like fluffy eggs, crispy bacon, and crunchy hashbrowns, just to name a few! Imagine all of that put together, in deep-dish-fashion, warmly waiting to wake you! Sounds like a wonderful way to wake up. Deep-Dish Breakfast Casserole makes every morning a little sunnier!

Ingredients

  • 8 slices bacon, thick-cut
  • 1/2 cup sweet onion, chopped
  • 1 (32-ounce) package frozen hashbrowns, thawed
  • 2 1/2 cups sharp cheddar cheese, shredded, divided
  • 1 1/2 teaspoons kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 6 large eggs
  • 1 (8-ounce) container sour cream
  • 1 cup whole milk
  • cherry tomatoes, to taste, halved
  • scallions, to taste, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Lightly grease a 13×9-inch baking dish.

Step 3 –In a large skillet over medium heat, cook the bacon until crispy and transfer it to a paper-towel-lined plate to drain.

Step 4 –Reserve 1 tablespoon of the bacon drippings in the skillet.

Step 5 –Add the onion to the skillet and cook, stirring often, until tender, about 5 minutes.

Step 6 –Crumble 5 pieces of the cooked bacon.

Step 7 –Stir the crumbled bacon, the hashbrowns, 2 cups of the cheese, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper into the cooked onion until combined.

Step 8 –Spoon the mixture into the prepared baking dish.

Step 9 –In a large bowl, whisk the eggs, the sour cream, the milk, the remaining salt, and the remaining pepper together.

Step 10 –Pour the egg mixture over the hashbrown mixture.

Step 11 –Cover the dish with foil and bake for 40 minutes.

Step 12 –Discard the foil and sprinkle with the remaining cheese.

Step 13 –Bake until the cheese is melted and the casserole is bubbly, about 10-15 minutes.

Step 14 –Let the casserole sit for 10 minutes.

Step 15 –Crumble with the remaining bacon and sprinkle overtop the casserole.

Step 16 –Garnish with the tomatoes and scallions.

Step 17 –Serve.
