Diet-Starts-Tomorrow Cake

The holidays bring lots and lots of tasty food. There’s absolutely no shame in indulging in those goodies… it’s one of life’s greatest and simplest pleasures! But once the tinsel is taken down, the comfort food is all gone, and the New Year has started, you’re ready to feel bright-eyed and less groggy. Oh… hold on. We skipped over the best dessert we had! Welp, one more day of indulging can’t hurt any. This calls for a toast to the Diet-Starts-Tomorrow Cake! Who could ever turn away this moist, chocolatey cake smothered in creamy, rich chocolate frosting anyway?! It’s literally a picture-perfect version of the classic. Every single bite will be worth it. Future you will be glad you did it, too. Diet-Starts-Tomorrow Cake will forever be too good to ignore!

Ingredients

  • 2 cups sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup cocoa
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup water, boiling
  • chocolate frosting, of your choice, to taste

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat 2 baking pans with cooking spray.

Step 3 –In a large bowl, stir the sugar, the flour, the cocoa, the baking powder, the baking soda, and the salt together.

Step 4 –Add the eggs, the milk, the oil, and the vanilla to the batter and beat with a hand mixer on medium speed for 2 minutes.

Step 5 –Carefully and slowly stir the boiling water into the batter to make it thin, making sure the batter is constantly moving as you do so.

Step 6 –Evenly divide the batter between the 2 prepared baking pans.

Step 7 –Bake until a toothpick inserted in the center of each cake comes out clean, about 30-35 minutes.

Step 8 –Allow the cakes to cool for 10 minutes prior to turning them out onto a wire rack to cool completely.

Step 9 –Once the cakes have cooled completely, frost them with the chocolate frosting.

Step 10 –Slice and serve.
