Ingredients

For the vanilla cheesecake:

  • 1 cup non-fat plain Greek yogurt
  • 4 ounces low-fat cream cheese, room temperature
  • 3 tablespoons granulated sugar
  • salt, to taste
  • 2 teaspoons vanilla bean paste

For the berry layers:

  • 1 cup fresh strawberries, diced
  • 1 teaspoon granulated sugar
  • 1 cup fresh blueberries

Directions

Step 1 –In the bowl of a stand mixer fitted with the whisk attachment, add the Greek yogurt, the cream cheese, 3 tablespoons of the sugar, the salt, and the vanilla bean paste and beat on medium-high speed, scraping down the sides once or twice, until it is fluffy and smooth.

Step 2 –In a small bowl, add the strawberries and the remaining sugar and toss to coat.

Step 3 –Split an equal portion of the blueberries between three small serving glasses, then evenly divide 1/2 of the cheesecake mixture between the glasses, layering it atop the blueberries. Top the cheesecake layers with an equal portion of the strawberries, then evenly layer the remaining cheesecake mixture atop the strawberries in each glass.

Step 4 –Refrigerate the parfaits until ready to serve.
