Ingredients
For the sauce:
- 1/4 cup hoisin sauce
- 1/4 cup water
- 1 tablespoon low-sodium soy sauce
- 1 1/2 teaspoons cornstarch
- 1/2 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes
- salt, to taste
- black pepper, to taste
For the stir-fry:
- 6 ounces ramen noodles
- 2 teaspoons olive oil
- 1 cup cabbage, sliced
- 4 cups vegetables, such as bell peppers, carrots, snap peas, and bean sprouts, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon fresh ginger, grated
Directions
Step 1 –In a bowl, whisk the hoisin sauce, the water, the soy sauce, the cornstarch, the sesame oil, the red pepper flakes, the salt, and the pepper together.
Step 2 –In a large pot of boiling water, cook the ramen until it is tender, about 3 minutes.
Step 3 –Reserve 1 cup of the pasta water and drain the rest.
Step 4 –In a skillet over medium heat, add the olive oil, the cabbage, and the vegetables and cook until the veggies are crisp-tender, about 3-4 minutes.
Step 5 –Add the garlic and the ginger to the veggies and cook until they are fragrant, about 1 minute.
Step 6 –Add the sauce to the veggies and simmer until the sauce has thickened, about 3-5 minutes.
Step 7 –Stir the cooked ramen into the veggie mixture.
Step 8 –Add the reserved pasta water, a little at a time, until the sauce has reached the desired consistency.
Step 9 –Serve.
