Focaccia Sandwiches

There’s still time in the season to fit in one last summer picnic! Or maybe it’s time for the first picnic of the summer! Or maybe you just want to feel that picnic whimsy regardless of the weather! No matter the season, Focaccia Sandwiches have you covered! These wonderfully packed sandwiches are stacked with flavors; tender, savory deli meats, succulent salami, creamy provolone, and some veggies for a touch of freshness! An extra tangy olive-mayo really brings out the most in all of the delicious meats, and then of course, the focaccia is tender and extra flavorful. Focaccia Sandwiches are enough for a crowd, keeping up that picnic feeling even indoors!

Ingredients

  • 1/3 cup mayonnaise
  • 1 (4.25-ounce) can chopped ripe olives, drained
  • 1 (about 12-ounce) loaf focaccia bread, split
  • 4 romaine leaves
  • 1/4 pound shaved deli ham
  • 1 medium baby sweet red pepper, thinly sliced into rings
  • 1/4 pound shaved deli turkey
  • 1 large tomato, thinly sliced
  • 1/4 pound hard salami, thinly sliced
  • 1 (7-ounce) jar roasted sweet red peppers, drained
  • 6 slices provolone cheese

Directions

Step 1 –In a small bowl, combine the mayonnaise and the olives.

Step 2 –Spread the olive-mayo over the bottom half of the bread.

Step 3 –Layer the romaine, the ham, the baby sweet red peppers, the turkey, the tomatoes, the salami, the roasted sweet red peppers, and the provolone cheese over the olive-mayo layer.

Step 4 –Replace the bread top.

Step 5 –Cut the sandwich into 24 pieces, securing each segment with a toothpick.

Step 6 –Serve.
