Ingredients
For the pork tenderloin:
- olive oil, to taste, for grilling
- 1 pork tenderloin
- 1/4 cup dry rub seasoning
For the chimichurri sauce:
- 1 bunch cilantro leaves
- 1/2 cup olive oil
- 1 small onion, quartered
- 1/2 teaspoon salt
- 2 cloves garlic
- 2 tablespoons apple cider vinegar
Directions
Step 1 –Brush the grill grates with the olive oil.
Step 2 –Preheat the grill to medium heat.
Step 3 –Rub the pork all over with the dry rub seasoning and place it in a dish.
Step 4 –Cover the pork and keep it in the refrigerator until ready to grill.
Step 5 –Grill the tenderloin, rotating it to ensure all sides are browned, until its internal temperature reaches 145 degrees F, about 20 to 25 minutes.
Step 6 –Add the cilantro leaves, the remaining olive oil, the onion, the salt, the garlic, and the apple cider vinegar to a blender and pulse, scraping the sides as needed, until smooth, about 1 minute.
Step 7 –Slice the pork diagonally and drizzle it with the chimichurri sauce.
Step 8 –Serve.
