Glaze-of-Glory Meatloaf

Ingredients

For the meatloaf:

  • 2 pounds ground beef
  • 1 medium onion, finely chopped
  • 2 large eggs
  • 3 cloves garlic, minced
  • 3 tablespoons ketchup
  • 3 tablespoons fresh parsley, finely chopped
  • 3/4 cup panko breadcrumbs
  • 1/3 cup milk
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons Italian seasoning
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon ground paprika

For the glaze:

  • 3/4 cup ketchup
  • 1 1/2 teaspoons white vinegar
  • 2 1/2 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Line a 9×5-inch loaf pan with parchment paper.

Step 3 –In a large bowl, add the ground beef, the onion, the eggs, the garlic cloves, 3 tablespoons of the ketchup, the parsley, the breadcrumbs, the milk, 1 1/2 teaspoons of the salt, the Italian seasoning, 1/4 teaspoon of the ground black pepper, and the paprika and mix well to combine.

Step 4 –Add the meat mixture to the prepared loaf pan and gently press it down and evenly shape it into a loaf.

Step 5 –Bake the meatloaf for 40 minutes.

Step 6 –In a small bowl, mix the remaining ketchup, the white vinegar, the brown sugar, the garlic powder, the onion powder, the remaining black pepper, and the remaining salt together.

Step 7 –Spread the glaze over the meatloaf and bake until its internal temperature reaches at least 160 degrees F, about 15-20 minutes.

Step 8 –Let the meatloaf rest for 10 minutes.

Step 9 –Slice the meatloaf.

Step 10 –Serve the meatloaf drizzled with the juices from the baking pan.
