Good Day Bake

It’s going to be a good day! How are we so sure? Because the Good Day Bake is just about to come out of the oven! This grits casserole is tender and packed with poultry flavor and plenty of savory sausage crumbles! But what really makes it sunny are the runny eggs baked right into the casserole, so every slice is essentially self-dipping! With a good amount of cheese to boot, Good Day Bake proves that every day can be great so long as you start off on the right foot… or in this case, the right plate!

Ingredients

  • 2 cups water
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup old-fashioned grits
  • 2 tablespoons all-purpose flour
  • 8 medium eggs, divided
  • 1/2 pound ground breakfast sausage, cooked and crumbled
  • 2 cups smoked Gouda cheese, shredded
  • 1/2 cup sharp cheddar cheese, shredded, plus more, to taste, for garnish
  • 2 teaspoons fresh sage, chopped, plus more, to taste, for garnish
  • cherry or grape tomatoes, optional, to taste, halved, for garnish

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Coat a 9×13-inch baking dish with cooking spray.

Step 3 –In a large saucepan, bring the water, the broth, the salt, and the pepper to a boil over medium-high heat.

Step 4 –Gradually whisk in the grits and the flour.

Step 5 –Reduce the heat to low.

Step 6 –Cover and simmer the grits mixture, whisking occasionally, until the grits are tender, about 15-20 minutes.

Step 7 –Transfer the saucepan from the heat.

Step 8 –In a medium bowl, whisk 2 of the eggs together.

Step 9 –Gradually, whisk in 1 cup of the hot grits mixture to temper the eggs.

Step 10 –Whisk the egg mixture into the remaining grits mixture.

Step 11 –Stir in the sausage, the Gouda, 1/2 cup of the cheddar, and 2 teaspoons of the sage.

Step 12 –Pour the sausage-grits mixture into the prepared pan.

Step 13 –Cover the pan loosely with foil and bake for 20 minutes.

Step 14 –Uncover and bake until the cheeses are melted and the dish is set, about 15 minutes.

Step 15 –Using the back of a spoon, make six indentations in the grits mixture.

Step 16 –Crack one of the 6 remaining eggs into each indentation.

Step 17 –Bake uncovered until the eggs are soft set, about 8 minutes.

Step 18 –Let the bake stand for 5 minutes.

Step 19 –Garnish with the extra cheddar cheese, the extra sage, and the tomatoes.

Step 20 –Serve.
