This is one of Grandma’s go-to dinners that’s guaranteed to make everyone smile! Grammy’s Baked Chicken Thighs get a head start by using juicy, succulent chicken thighs, with the skin left on for that extra poultry satisfaction. But then it takes advantage of its strengths by using Grammy’s special seasoning blend; a mix of herbs, spices, and even some smoky brown sugar to make the most of the natural chicken flavors. One serving of Grammy’s Baked Chicken Thighs may not be enough!
Ingredients
For the seasoning mix:
- 1 tablespoon Italian seasoning or dried oregano
- 2 teaspoons brown sugar
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon coarse kosher salt or 1/2 teaspoon table salt
- 1/2 teaspoon black pepper
For the chicken:
- 3 pounds chicken thighs, bone-in and skin-on
- 2 tablespoons olive oil
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –In a small bowl, add the Italian seasoning, the brown sugar, the paprika, the garlic powder, the onion powder, the salt, and the black pepper and whisk to combine.
Step 3 –Pat the chicken thighs dry with paper towels and transfer them to a 9×13-inch baking dish.
Step 4 –Rub both sides of the chicken thighs with the olive oil.
Step 5 –Sprinkle the seasoning over the chicken, rubbing it on both sides and trying to get underneath the skin as well.
Step 6 –Arrange the chicken thighs skin-side up in the baking dish.
Step 7 –Bake until the chicken reaches an internal temperature of 165 degrees F, about 30-40 minutes.
Step 8 –Optionally, broil the chicken thighs until the skin is extra crispy, about 2 minutes.
Step 9 –Serve.
