Ingredients
- 1 1/2 cups rice, cooked
- 1/4 cup raisins
- 2 large eggs
- 1 cup whole milk, plus more, optional, to taste, for serving
- 1/2 cup heavy cream
- 1/2 cup sugar
- 1/2 teaspoon ground nutmeg

Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Grease a 1-quart casserole dish.
Step 3 –Place the rice and the raisins in the prepared casserole dish.
Step 4 –In a small bowl, whisk the eggs, 1 cup of the milk, the heavy cream, the sugar, and the nutmeg.
Step 5 –Pour the egg mixture over the rice mixture.
Step 6 –Bake uncovered until a knife inserted into the center comes out clean, about 45-50 minutes.
Step 7 –Allow the rice pudding to cool slightly.
Step 8 –Place the rice into serving dishes and top with the extra milk.
Step 9 –Serve.
