Grandma can make a mean side dish, and make no mistake; this one is something special. Grandma’s Creamed Spinach is truly creamy, tangy, and hearty, with the leafy green spinach pairing beautifully with fragrant garlic in a creamy, rich sauce! There’s no stress and no debate around Grandma’s Creamed Spinach… it’s an amazing dish!

Ingredients
- 3-4 bunches (2 1/2 pounds) flat-leaf spinach, trimmed, cleaned
- 2 tablespoons butter
- 1/2 medium onion, minced
- 4 cloves garlic, minced
- coarse salt, to taste
- ground pepper, to taste
- 4 ounces cream cheese, cut into pieces
- 1/2 cup milk
- ground nutmeg, to taste

Directions
Step 1 –In a large pot of salted, boiling water, add the spinach and cook until just wilted, about 1 minute.
Step 2 –Drain the spinach in a colander and rinse it under cold water until it is cooled.
Step 3 –Squeeze the spinach to remove as much of the liquid as possible.
Step 4 –Coarsely chop the spinach and set it aside.
Step 5 –In a large saucepan over medium heat, melt the butter.
Step 6 –Add the onions, the garlic, the salt, and the pepper and cook, while stirring occasionally, until the onions soften, about 3-5 minutes.
Step 7 –Add the cream cheese and the milk and cook, while stirring, until the cream cheese is melted and smooth.
Step 8 –Add the spinach and stir to combine.
Step 9 –Simmer the spinach mixture until thickened, about 8-10 minutes.
Step 10 –Add the nutmeg and stir or toss to combine.
Step 11 –Taste the spinach mixture for seasoning and add the salt and the pepper, as needed.
Step 12 –Serve.
