Creamed Peas & Potatoes

If you don’t have a potluck on the calendar, well, you need to schedule one promptly so you can show off these Creamed Peas & Potatoes! A big bowl of these chunky potatoes and squishy peas, swimming in a creamy sauce is just what the spread of collaborating cuisines was missing. Come one, come all; it’s time to chow down on some Creamed Peas & Potatoes!

Ingredients

  • 2 pounds small red or white potatoes, quartered
  • water, to taste
  • 2 tablespoons onion, chopped
  • 2 tablespoons butter
  • 3 tablespoons plus 1 teaspoon all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 cups 2% milk
  • 1 cup half-and-half
  • 3 cups fresh or frozen peas

Directions

Step 1 –In a large saucepan, add the potatoes and enough of the water to cover them. Bring to a boil.

Step 2 –Reduce the heat to a simmer and cook the potatoes until they are tender, about 8-12 minutes. Drain the water.

Step 3 –While the potatoes are cooking, in a large saucepan, add the onions and the butter and sauté until they are tender.

Step 4 –Stir the flour, the salt, and the pepper into the onion mixture until it is blended.

Step 5 –Gradually add the milk and the half-and-half to the onion mixture.

Step 6 –Bring the sauce mixture to a boil and then cook, while stirring, until it has thickened, about 2 minutes.

Step 7 –Stir the cooked potatoes and the peas into the sauce and cook until they are heated through.

Step 8 –Serve.
