Heart-of-Palm Salad

Freshness is abounding in every bite! Heart-of-Palm Salad is a wonderful addition to any meal, and we know you’re going to fall in love. Fresh arugula, hard-boiled eggs, shredded chicken breast, and the unique vegetable heart of palm are piled up and drizzled with a lemon vinaigrette to all come together and give this salad a great name. Heart-of-Palm Salad will become a new love for everyone. It’s certainly dear to our hearts!

Ingredients

  • 4 cups arugula
  • 3 eggs, hard-boiled and halved
  • 1 1/2 cups chicken breast, boneless and skinless, cooked and shredded
  • 1 cup heart of palm, sliced
  • 2 tablespoons chives, optional, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper

Directions

Step 1 –In a large serving bowl, arrange the arugula, the hard-boiled eggs, the shredded chicken breast, and the heart of palm.

Step 2 –Sprinkle the chives over the salad.

Step 3 –In a small bowl, add the olive oil, the lemon juice, the salt, and the black pepper and whisk to combine.

Step 4 –Drizzle the vinaigrette over the salad and gently toss to combine.

Step 5 –Serve.
