Hearty Delicious Soup

If you’re really, really hungry, then a bowl of Hearty Delicious Soup is what you need! Especially when the weather is brisk, this stick-to-the-rib kind of sipper that’s filled with hunky, tender beef, some fluffy barley, and an assortment of all the best veggies will surely fill you up to the brim and then some. It doesn’t take too long to simmer up (at least for such a hearty soup), so grab a spoon because Hearty Delicious Soup will be satisfying real soon!

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 carrots, sliced
  • 1 rib celery, sliced
  • 2 cups leftover beef, such as pot roast, steak, or roast beef, cut into cubes
  • 6 cups reduced-sodium beef broth
  • 1 (14.5-ounce) can petite diced tomatoes
  • 1/2 green pepper, diced
  • 2/3 cup pearl barley
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon dried thyme
  • 1 package beef gravy mix
  • 1 bay leaf
  • 2 tablespoons red wine
  • 2 tablespoons fresh parsley
  • salt, to taste
  • pepper, to taste

Directions

Step 1 –In a large pot over medium heat, add the oil and the onion and cook, stirring occasionally, until it is softened.

Step 2 –Add the garlic, the carrots, the celery, the beef, the beef broth, the tomatoes and their juices, the green pepper, the barley, the Worcestershire sauce, the thyme, the gravy mix, the bay leaf, the red wine, the parsley, the salt, and the pepper to the onion and bring to a boil.

Step 3 –Reduce the heat and simmer the soup, covered, until the barley is cooked, about 40-50 minutes.

Step 4 –Remove and discard the bay leaf.
