Ingredients

  • 4 cups frozen shredded hash brown potatoes, thawed
  • 1 pound bulk pork sausage, cooked and drained
  • 1/2 pound bacon strips, cooked and crumbled
  • 1 medium green pepper, chopped
  • 1 green onion, chopped
  • 2 cups cheddar cheese, shredded and divided
  • 4 large eggs
  • 3 cups 2% milk
  • 1 cup reduced-fat biscuit mix
  • 1/2 teaspoon salt

Directions

Step 1 –Grease a 9×13-inch baking dish.

Step 2 –In a large bowl, combine the hash browns, sausage, bacon, green pepper, green onion, and 1 cup of cheese.

Step 3 –Transfer the hash brown mixture to the prepared baking dish.

Step 4 –In another bowl, whisk the eggs, milk, biscuit mix, and salt until blended.

Step 5 –Pour the biscuit mixture over the hash brown mixture. Sprinkle the casserole with the remaining cheese.

Step 6 –Cover the dish and refrigerate for at least 8 hours and up to overnight.

Step 7 –Preheat the oven to 375 degrees F.

Step 8 –Transfer the casserole from the refrigerator while the oven heats.

Step 9 –Bake, uncovered, until a knife inserted in the center comes out clean, about 30-35 minutes.

Step 10 –Let stand for 10 minutes before cutting.

Step 11 –Serve.
