Ingredients
- 1 1/2 cups fresh strawberries, diced
- 2 tablespoons honey
- 1/2 cup granulated sugar
- 1 teaspoon lemon juice
- 1 cup heavy cream
- 1/2 cup half-and-half
- 1 teaspoon vanilla extract
Directions
Step 1 –Mix the diced strawberries, the honey, the sugar, and the lemon juice in a large bowl.
Step 2 –Allow the strawberry mixture to sit for 20 minutes.
Step 3 –Use a masher or fork to mash the macerated strawberry mixture until the strawberry pieces are broken up. If a few larger pieces remain, that is fine.
Step 4 –Add the heavy cream, the half-and-half, and the vanilla extract to the strawberry mixture until just combined.
Step 5 –Pour the strawberry mixture into an ice cream maker and follow the instructions on the machine.
Step 6 –Serve immediately or allow the ice cream to freeze for a few hours to thicken.
