Honey’s Special Pork Chops

Ingredients

  • 4 pork chops, bone-in or boneless
  • salt, to taste
  • black pepper, to taste
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 6 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup water or chicken broth
  • 2 tablespoons rice wine vinegar, can substitute apple cider vinegar or white vinegar
  • scallions, to taste, sliced, for topping
  • black sesame seeds, optional, to taste, for garnish
  • vegetables, to taste, cooked and warm, for serving

Directions

Step 1 –Preheat the oven broiler on medium-high heat.

Step 2 –On a large platter, add the pork chops and season both sides with the salt, the black pepper, and the garlic powder.

Step 3 –In a large, broiler-proof skillet over medium-high heat, add the olive oil and heat.

Step 4 –Add the seasoned pork chops to the heated olive oil and sear on both sides until browned and the pork chops are cooked through, reading 145 degrees F when tested with a meat thermometer in their thickest parts.

Step 5 –Transfer the seared pork chops from the skillet to a large platter. Set them aside.

Step 6 –In the same skillet with the heat reduced to medium, add the butter, stirring to scrape up any browned bits from the bottom of the pan, and allow the butter to melt.

Step 7 –Add the minced garlic to the melted butter and sauté until fragrant, about 30 seconds.

Step 8 –With the heat increased to medium-high, add the honey, the water, and the vinegar to the garlic mixture and cook until the sauce reduces and thickens slightly, stirring occasionally, about 3-4 minutes.

Step 9 –Transfer the seared pork chops into the honey sauce and baste generously on both sides of the pork chops.

Step 10 –Transfer the skillet of basted pork chops to the oven and broil until the edges of the pork chops are slightly charred, for about 1-2 minutes.

Step 11 –Plate the broiled pork chops, topped with the scallions and the black sesame seeds, and serve over the vegetables and the rice.
