Ingredients

  • 1 tablespoon olive oil
  • 5 links sweet or hot Italian sausages, casings on
  • 1 tablespoon butter
  • 1 large yellow sweet onion, sliced
  • 1 red bell pepper, deseeded and sliced
  • 1 green bell pepper, deseeded and sliced
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 cup chicken broth
  • 1 (14-ounce) can diced tomatoes, drained

Directions

Step 1 –In a large skillet over medium heat on the stove-top, heat the olive oil.

Step 2 –Once the olive oil is heated, brown the sausages, careful not to cook them completely.

Step 3 –Once the sausages have a good brown crust on both sides, remove them from the skillet and set them aside to cool slightly.

Step 4 –Slice the sausage into 2-inch slices once they’ve cooled slightly.

Step 5 –In the same pan, melt the butter.

Step 6 –Once the butter is melted, add the onion and bell peppers to the pan and cook until slightly softened.

Step 7 –Add the garlic, oregano, basil, salt, chicken broth, and diced tomatoes.

Step 8 –Return the sausage back to the pan and cook until the sausage is done.

Step 9 –Cover for 5 minutes.

Step 10 –Serve hot!
