Killer Smashed Potatoes

Smashed potatoes have become all the rage lately, but only one stands above the rest. Trust us, it’s a real killer. Killer Smashed Potatoes are crispy, golden, and perfectly seasoned on the outside, and fluffy on the inside. Plus, melted parmesan cheese all on top delivers that hit of sharp nuttiness no one can resist. Killer Smashed Potatoes are like the oven fries you never knew were possible!

Ingredients

  • 2 teaspoons salt
  • 2 pounds small (1-2-inch diameter) potatoes
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons garlic salt
  • 1/4 teaspoon black pepper
  • 3/4 cup parmesan cheese
  • 2 tablespoons parsley, finely chopped, for garnish

Directions

Step 1 –Line a rimmed baking sheet with parchment paper.

Step 2 –Bring a pot of water to a boil.

Step 3 –Add the salt to the boiling water.

Step 4 –Add the potatoes to the salted boiling water and then reduce the heat to a low boil.

Step 5 –Boil the potatoes until they are tender and easily pierced with a fork, about 25-30 minutes.

Step 6 –Drain the potatoes.

Step 7 –Preheat the oven to 450 degrees F.

Step 8 –Transfer the potatoes to the prepared baking sheet, spacing them out evenly.

Step 9 –Using a potato masher or the flat bottom of a drinking glass, smash the potatoes to 1/2-inch thickness, pressing gently so you don’t break the potatoes apart.

Step 10 –Drizzle the tops of the potatoes with about 1/2 of the olive oil.

Step 11 –Sprinkle the potatoes with 1/2 of the garlic salt and 1/2 of the black pepper.

Step 12 –Bake the potatoes for 15 minutes.

Step 13 –Flip the potatoes, drizzle them with the remaining olive oil, and season them with the remaining garlic salt and the remaining pepper.

Step 14 –Bake until the potatoes are crisp with golden-brown edges, about 12-15 minutes.

Step 15 –Sprinkle the potatoes with the parmesan cheese.

Step 16 –Bake until the cheese is just melted, about 2-3 minutes.

Step 17 –Serve garnished with the parsley.
